Varieties of the unripe papaya pickling dish are carrots, onions, daikon radish, and bell peppers or chili peppers, sometimes including pineapple chunks or sweet raisins.
Atchara vegetables are commonly prepared julienned or grated.
Taste Atlas describes the preparation:
“The heated marinade, which combines vinegar, sugar, ginger, garlic, salt, and peppercorns, is poured over the vegetables, and the relish is pickled until all the flavors develop.
